What’s something you would attempt if you were guaranteed not to fail? My answer probably matched what thousands of others have…quit my job and open a food truck. I know people say this, but this has always been a dream of mine. Mine would be an allergy friendly food truck that would provide all the favorites in an allergy free version.

Food allergies are becoming more common so I feel like there should be really good food alternatives available at festivals that don’t include having to eat straight veggies or everything having avocado or something else that makes food boring. I would like to have a good burger without paying $10 for a gluten free bun, or being able to eat Mac N Cheese with all the fun stuff on it being it is a gluten -free, dairy-free option that doesn’t take up my food budget for the day, or eating dairy free ice cream when it is hot as hell outside.

Anyone with food allergies know how hard it can be to go to a festival surrounded by food trucks, all selling foods you can’t eat. I love to cook and experiment with food so opening a food truck would be the absolute dream for me.
