This allergy free recipe is similar to either Kraft or Velveeta, as it is a cheese sauce instead of the typical baked macaroni. It is gluten free, dairy free and soy free and tastes so good when you want that mac and cheese fix.

Like so many new things, you’ll need to experiment and try different things that work for you. This is especially true when trying all of the allergy free recipes. I have come to realize that if you do enough research, someone else has already done the experimenting for you. Thank you to those ahead of us!! I used to make macaroni all the time so I basically took my normal recipe and just altered the ingredients.

I have cooked so many meals with gluten free pasta however I guess I’m used to using the brown nice pasta, that using a different pasta didn’t strike me as needing anything different. I wanted the shell pasta shape and I could only find it in my local store as a chickpea pasta. Now, I should have realized half way through cooking the pasta “that water looks a little thick. I should probably do something about that”. Uh, nope! Didn’t register until I was finished, which was a real shame. So now that I’ve learned that lesson, I’m sharing it with you. I also wasn’t sure about the chickpea pasta taste, so I won’t be using it again.

For the milk, I used an unsweetened almond milk and a plant based butter. You should be able to get these at your local supermarket, no specialty stores needed. Country Crock makes a plant based butter. For the cheese, I’ve been able to find shredded cheese that is plant based and dairy free. The brand is BetterGoods and can be found with the other cheeses It’s in a green bag, if that helps you do a better quick scan. When you are melting your cheese, you will need to heat it on med to low for a little longer than you would the regular shredded cheese as it doesn’t take a little longer for it to melt.

That’s it. A few little tweaks in the ingredients and you can cook your stove top mac the same way you always have. It won’t taste quite the same but this is where your seasonings will come in handy, especially the salt and pepper.
